Alpharetta Dining Destination Introduces À La Carte Menu

ATLANTA (May 4) - In celebration of its 20th anniversary, Ray’s at Killer Creek is getting back to its steakhouse roots and launching a new dinner menu with a more traditional format that features signature steaks, seafood and side dishes offered as à la carte items.

“We really appreciate all the guests we have come to know over the past two decades,” says Ray’s Restaurants owner Ray Schoenbaum. “The dramatic growth that has happened in Alpharetta since we first opened Ray’s at Killer Creek is something that really stands out for me when I think about the past 20 years. It’s a constant motivator for us to push the envelope and give guests a unique dining experience that is full of surprises.”

Executive chef Mike Fuller’s new dinner menu is indeed full of surprises, and although it features a more traditional steakhouse format, the selection of dishes extends beyond classic steakhouse fare. Following are a few examples:

·        Starters, Salads and Soups ($11-$125) include a chilled seafood tower, New Orleans BBQ shrimp with Boursin grit cake and BBQ butter, loaded Statesboro blue cheese chips, a signature lobster Cobb and seafood gumbo.
·        Steaks and Chops ($29-$96) feature a dry-aged porterhouse, cowboy ribeye, herb-marinated lamb chop, steak frites, filet mignon and prime New York strip.
·        The Seafood Market ($30-$60) boasts Block Island swordfish, Ora King salmon, day boat halibut, twin lobster tails and live whole Maine lobster.
·        Signature Dishes ($27-$36) include salmon Oscar, shrimp and grits and horseradish encrusted black grouper.
·        Shareable Sides ($8-$25) range from lobster mac and cheese and corn crème brûlée to a Gouda twice-baked potato and lightly crisped Brussels sprouts and cauliflower.

In tandem with the new menu launch, Schoenbaum and his team have also taken great care to further elevate Ray’s at Killer Creek’s service style in the form of luxurious touches that differentiate the restaurant from other North Fulton steakhouses. Food is served on 400-degree plates, side items are brought to the table by a team of servers who personally dish them up to each guest, and hand towels are distributed after the consumption of finger foods, leaving guests feeling fully pampered.  

 “I think one of the reasons Ray’s at Killer Creek has been so successful for so long is because we’ve upgraded the restaurant over the years to make it more appealing to our guests,” says Schoenbaum. “We are continuing to do things that make customers say, ‘Wow, I didn’t expect that.’”

The bar at Ray’s at Killer Creek opens at 4 p.m. daily to accommodate guests for happy hour or pre-dinner drinks before the dining room opens at 5 p.m. Brunch service is offered on Sunday 10 a.m. to 3 p.m. Ray’s at Killer Creek is also available for daytime private events and buyouts.

Georgia Farm-to-Fork Restaurant Makes Use of Backyard Garden for Current Culinary Forecast

ATLANTA (May 3, 2018) - Milton’s Cuisine & Cocktails is off to a farm-fresh start when it comes to dining trends. With close to 100 varieties of heirloom fruits and vegetables tended on site in the restaurant’s backyard garden, Milton’s Acre, the historic Crabapple restaurant is making produce the star of both drinks and dishes on the spring menu. Located in a restored 155-year-old farmhouse and 1930s cottage, Milton’s continues to honor its past in innovative new ways that are in line with this year’s food and beverage trends.

Farm to Shaker:
Guests at Milton’s don’t even have to get past the bar to get a taste of the garden.
·        Milton’s twist on a French 75 (la vie en rosemary) features a house-made rosemary simple syrup, while the restaurant’s Milton’s Acre-rita puts the spotlight on garden cilantro and jalapeños.
·        The restaurant enjoys substituting vegetables, such as cucumbers, for fruit to give cocktails an exciting new color and flavor profile.
·        Chocolate mint, purple basil, pineapple sage and strawberries are also grown in Milton’s Acre and used for muddling, syrups and garnishes in both alcoholic and non-alcoholic beverages. 

Vegetable-Centric Comfort Foods:
“Our cuisine is always farmhouse inspired, but I try to be increasingly creative with vegetable dishes and what the garden brings us, especially now that my wife has recently become a vegetarian,” says Milton’s executive chef Derek Dollar. “Not having to rely solely on what a supplier can bring us definitely makes for more inspired menus; the garden brings us comfort, so we want to pass that along to our guests.”
This season’s additions include
·        Greens and grain salad: baby arugula, pea tendrils, quinoa, shaved radish, red onion, toasted almonds, crumbled goat cheese, herbed white balsamic vinaigrette
·        Summer vegetable plate with creamed corn, marinated portabella mushroom, summer squash and poblano pepper ratatouille, smoked paprika chimichurri, crumbled goat cheese and pea tendrils

Colorful Cuisine:
New plantings in Milton’s Acre this year mean a more brilliant presentation on the plate – from the bright pink color of nasturtium to the vibrant green hues of Mexican sour gherkins to the violet-and-white stripes of fairy tale eggplant. Dollar utilizes these items for featured specials and during Milton’s popular Garden Dinner Series (special Sunday night dinners set up within the garden during summer and fall that also feature live music and wine pairings) and says they provide both the bright colors and bold flavors that he strives for in his dishes.  

Waste Reduction and Hyper-Local House-Made Items:
Scuppernongs and other muscadine grapes are in their third year of growth in Milton’s Acre and will become jam and wine for the restaurant in the years to come. “I always try to make the garden as beautiful and functional as possible,” says Dollar of his continued efforts to maximize Milton’s Acre and minimize the restaurant’s footprint.  

Dollar also believes in root-to-leaf cooking and reducing food waste whenever possible by making use of all edible parts of garden veggies, such as the tops and bottoms of beets and radishes.

He has also placed an emphasis on seasonal ingredients, seafood items and an array of wet aged meat selections to cater to all palates.

As he steps in to this new role, Adamson will be one of the participating chefs at the May 3 Atlanta Taste of the Nation benefit for Share Our Strength’s No Kid Hungry charities at Cobb Galleria. He will have an opportunity to personally greet many of the loyal guests who have helped American Cut Buckhead achieve success.

ABOUT JOHN ADAMSON:
John Adamson, Executive Chef of American Cut Buckhead, also known as the “nicest chef you will ever meet” has been cooking professionally for 22 years. He began his cooking journey at the age of 16 and was managing restaurants by the age of 21. From a young age Adamson was always given the opportunity to be a culinary leader in the kitchen. Adamson dedicates time to exploring different types of cuisines, shopping farmer’s markets and enjoying the great outdoors which inspires his cooking. Growing up in Point Pleasant, New Jersey, Adamson developed a deep love for “the freshest seafood found anywhere.” As the Executive Chef of American Cut Buckhead, a huge priority for Adamson is to ensure that all guests feel welcomed. “If guests don’t feel welcomed, the quality of the entire dining experience is diminished,” Adamson says. Outside of the kitchen, Chef Adamson is passionate about music and can often be found playing his guitar and discovering new music.
